Here is an Avocado Dip recipe that my friend Lori made that is very yummy!
Avacado Dip
1 - 15 oz can white corn
1 - 15 oz can black-eyed peas
2/3 C cilantro, chopped
2/3 C scallions, diced
1/2 Lg. tomato, diced
4 avocados, chopped
Combine above ingredients in a bowl and toss with the dressing mixture below:
1/4 C olive oil
1/4 C balsamic vinegar
2 cloves minced garlic
3/4 tsp. salt
3/4 tsp. pepper
2 tsp. cumin
Serve with tortilla chips. Can be served immediately.
